Sweet and salty combine for a superb summer salad, made with crisp watermelon, refreshing mint and a drizzle of homemade lemon balsamic.
Ingredients:
- 1/2 mini watermelon
- 4 tomatoes
- 1/2 small red onion
- 1 block feta
- 1/2 package fresh mint
- 1/2 package fresh basil
- juice of 3/4 lemon
- 1 cup olive oil
- 1/3 cup balsamic vinegar
- 2 tbsp Golden Light Agave
- salt & pepper
Directions:
- Watermelon Feta Salad: Cut watermelon, tomato (seeds removed), red onion and feta into similar sized cubes. Gently rinse, pat dry and tear fresh basil and mint. Toss all ingredients together and set aside.
- Lemon Balsamic Vinaigrette: Whisk olive oil, balsamic, lemon juice, agave and salt & pepper vigorously to combine. Drizzle over watermelon salad.
Cooking Tip: If you are making this salad ahead of time, it is best to leave the feta and red onion of to the side until you are ready to serve.
